Week one of 31 days of nothing

So we're coming to the end of our week of no grocery shopping.  It has been a success.  I did go to the grocery store today to get pinto and black beans to soak so I can cook them tomorrow.  I also got dog food and band aids (for a nasty cut on my finger that keeps bleeding, making them a necessity).  Because I didn't go to our regular grocery store, I kept the shopping to a minimum.  I will do our regular shopping tomorrow, like normal, but needed to get the beans soaking. 

Other than the shopping today, I've spent no money on food this week.  While the girls haven't been thrilled with their food choices all week, they've survived and been fed relatively healthy and yummy food.  They will be happy for a little more variety after the grocery store tomorrow, though.

One snack I did come up with for Violet was crispy roasted chickpeas.  I used this recipe.  I cooked mine for 35 minutes (at 30 minutes a few were done but most weren't).  I wanted to season them with berbere but couldn't find any so I just used a little salt and cayenne pepper (1/2 tsp for the equivalent of one can of chickpeas).  Violet says they're super yummy.  I wish I would have tried some and had Blueberry try some before adding the cayenne pepper.  Next time I'll seperate them before seasoning so I can taste them.

Tomorrow, in addition to cooking the pinto and black beans, I will be making more bread and granola bars.  I will also get as much ready for the week as possible, food-wise.  I can get lunches ready and stuff washed and chopped for the rest of the week.

Our meal plan for this coming week includes lentil and rice casserole (Sunday night), taco salad (Tuesday night), and pasta and pesto (Thursday night).  Violet will take leftovers, as always for lunch while Blueberry takes peanut butter and jelly roll ups.  I usually eat peanut butter and jelly sandwiches too.  Their lunches also include some type of fresh veggie (usually baby carrots or grape tomatoes), some type of fresh fruit and, often times, some type of nut.  I take whatever I can scrounge up of the fruits and veggies to eat on during the day in addition to my sandwich.

All in all, I'm feeling pretty good about where we are budget-wise as we head into our second week of 31 one days of nothing.

I'm enjoying these posts! After rent, food is my biggest cost so I am looking for ways to cut down and still remain healthy. I am going to try this chickpea recipe- thanks!

Hah, Sharon! That calls for a dash of cayenne. I ended up using half a teaspoon to get them to Violet's taste. Will still try that though. Maybe Blueberry and I will actually be able to eat them too.
